Pure Spring Water
The Guotai distillery uses water drawn from the pure springs of the Chi-Shui River.
It takes an entire solar year to complete the traditional Baijiu brewing cycle, with each stage performed in due season: making the yeast in summer and adding sorghum in fall resulting in:
9 rounds of steaming
8 rounds of fermentation
7 rounds of distillation and drawing
Only after this process is performed, is the spirit deemed pure, fragrant and mature enough to be worthy of the name Guotai.
The whole aging process takes at least five years before Guotai is ready to drink.
The new Baijiu is sealed into ceramic jars and stored for at least three years. Then it is the master blender’s turn to practice his art. Tasting, mixing with older vintages, tasting again and mixing again, he creates the signature Guotai style of Baijiu: natural, mild, elegant and lingering. The spirit goes back into the cellar for another year of aging, which further mellows the flavor.
